Hey everyone! Happy Sunday and I hope you all had lovely romantic valentine’s days! I just got back from a horrid 8 mile run that took me FOREVER because I simply wasn’t feeling it today. But at least I finished all 8 miles and next week is my slower week (3 four mile runs) so I get some time to recover! The race is now about 2 months away so hopefully this crappy run was just a fluke!
We picked a recipe from the cookbook that the lovely people at Earthbound farms sent me a while ago. I let Bret choose and he picked out a lovely cannelloni
I’ve never made anything like this before but it turned out great! Nice and light with a ricotta spinach filling and marinara sauce topping. Very simple to make too, I highly recommend this cookbook you guys, every recipe I have made from it so far has been a huge success!
Bret was in charge of the potatoes, and he put so much cheese in them that they turned yellow lol, boys will be boys! Not how I would have made them I assure you, but they were darn tasty anyway! And some salmon for protein on the side
I have to admit though that the star player of the night were the delicious cosmos I made before and after dinner, and the red wine with! We had a very tipsy Vday dinner which just made it that much more fun! lol
These cosmos are dangerously good so beware! To make them just combine 1.5 shots of absolute vanilla vodka (my favorite drink ever ever ever!) with a splash of lemon lime soda and a bit of pom juice (or cranberry) I don’t even use a shaker I just pour it directly into the glass, can’t go wrong!
And we finished off this bottle of red diamond with dinner. I’m not a huge red fan but this was quite good. Not too bitter, and not too metallic tasting like some reds get. All together I think I had about 4 drinks which is enough to put me in la la land!

Cheese overload is such a boy thing! Your cannelloni looks delicious, and your plate is so balanced and lovely. Glad you two had a great night!
